Recipe: Vegan Oatmeal Chocolate Chunk Muffies

The theme this season…things that I can make with chiachia seeds in dish “eggs”!  To make one chia “egg”, simply put one tbsp of whole chia seeds into three tbsp of water and allow to thicken for at least 15 minutes.

I rarely measure when I bake, and when I make cookies, they come out as a muffin-like cookie!  These have  come to be lovingly known as “muffies” by my friends and are a hit.  Enjoy them cold, or warmed with some soft butter spread on them!

Dry ingredients:

  • 1/3 cup coconut flour
  • 1/3 cup rice flour
  • 1/3 cup pastry flour
  • 1 cup old fashioned oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 cup chopped pecans or walnuts

Wet ingredients

  • 1 ripe banana, mashed
  • 1 tsp vanilla
  • ½ cup coconut oil, softened
  • 1/3 cup honey
  • ½ cup brown sugar
  • 2 chia “eggs”
  • 1 chocolate bar of your choice, chopped

Preheat oven to 350 degrees F.  Combine all dry ingredients together.  In separate bowl, combine wet ingredients. Mix wet and dry ingredients together.  Add in chopped up chocolate bar and combine well. Drop by rough spoonful onto greased cookie sheet and bake for 14 minutes.
