Raw Food Nanaimo Bars

Crust

  • 3/4 cup raw almonds
  • 3/4 cup raw walnuts
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup cocoa powder
  • 20 dates
  • 2 tbsp maple syrup

Combine all ingredients in a food processor. Blend well. Press crust into 8X8-inch pan lined with parchment paper.

Middle layer

  • 2 cups shredded coconut, unsweetened
  • 3-4 tbsp coconut oil
  • 3-4 tbsp maple syrup
  • 1 tsp vanilla extract

Combine ingredients in a blender, blend until mixture becomes creamy. Smooth over the Nanaimo bar base. Chocolate topping: On low heat melt about 1/2 cup of dark chocolate chips mixed with 1 tbsp coconut oil and spread on top of bars. Or, melt 6 tbsp of coconut oil and 5 tbsp of raw cacao or cocoa powder and 2-3 tbsp maple syrup. Pour on top of bars. Refrigerate and cut into bars. Keep in covered container in refrigerator.
